Leftover potato salad, again.

My wife made a big bowl for Saturday's cookout. It sat in the fridge all day Sunday. Monday I ate it cold, straight from the container, standing at the counter.

I checked my glucose monitor after. Barely a blip... That surprised me. The same potato, hot off the stove, usually sends my blood sugar climbing hard.

Something changed overnight.

So I looked into it. And it turns out the fridge does something real to a potato while it sits there. Not a rumor from a wellness account. Actual chemistry.

A hot boiled potato carries one of the highest glycemic index scores of any common food, often in the 80s. That's higher than white bread. In some tests, it's higher than a spoonful of table sugar.

Here's what happens when you cook a potato. Heat breaks the starch open, and your body digests it fast. That fast digestion is what sends your blood sugar up so quickly. But cool that same potato in the fridge, and the starch molecules pack themselves back into a tighter structure. Your gut can't break that structure apart as easily anymore.

In other words, some of that starch stops behaving like a fast carb. It starts behaving more like fiber. Scientists call it resistant starch.

Researchers at Lund University in Sweden measured this directly. Cold storage nearly doubled the resistant starch in boiled potatoes, from 3.3 percent up to 5.2 percent. A separate study compared a chilled potato to a hot one and found the chilled version raised blood sugar and insulin less in the half hour after eating. Insulin was down by roughly a quarter. A hormone called GIP, one that tells your body to store fat, dropped by close to 40 percent.

That's not one small study, either. The same pattern shows up with pasta and rice. Cool them after cooking, and the resistant starch climbs. It happens with bread, too, if you let it sit. Potatoes just happen to be the food most people ask me about this time of year.

This isn't some obscure lab finding, either. A University of Florida extension report published this summer pointed to the same thing: cool your starches before you eat them and you get a real benefit, not just a change in texture. It's part of why the nutrition group ZOE has been pushing cold potato salad recipes all summer. The whole point of a good potato salad might be the cooling, not the mayo.

I tried it myself. Same potato, same size, cooked the same way.

● How To Do This

Cook them like normal
Boil, bake, or roast your potatoes the way you always do. The cooking method doesn't matter much here. The cooling is what does the work.

Let them cool all the way
Bring them down to room temperature first, then move them to the fridge. Give them at least four hours. Overnight works better.

Eat them cold, or warm them gently
Cold in a salad works great. A quick reheat works too. The resistant starch mostly sticks around even after you warm it back up.

Skip the long, hot reheat
A quick warm-up in the microwave or a pan is fine. Cooking it hot again for a long stretch can undo part of the effect.

None of this needs a special ingredient or a trip to the store. Just time and a refrigerator.

● Dos And Don'ts

Do let the potatoes cool all the way to room temperature before they go in the fridge. Do give them real time in there, not just a few minutes. Do this with rice and pasta too. The same trick works on both. Do add a splash of vinegar if you're making a cold potato salad. A study out of the same Swedish lab found vinegar lowers the rise even further, on top of the cooling.

Don't reheat the potatoes to piping hot for a long time. A quick warm-up is fine. Don't expect this to turn a potato into a low-glycemic food. It just takes the edge off. And don't skip this trick just because your potato salad has mayonnaise in it already. The cooling still counts, even under the dressing.

My kids think this is very funny. They call it "the science potato." My wife just calls it Tuesday.

It's revealing, though. The same food, cooked the same way, can act completely differently in your body depending on what happened to it after the pot came off the stove... I don't know if this trick works the same for everyone. The research is still young. But it's cheap, it's easy, and it costs you nothing to try it this week while cookout season is still hanging on.
