White bread wins. But barely. Whole wheat came in at +64. That's only six points behind plain white bread. So much for the health halo on the whole wheat loaf. In other words, most grocery store whole wheat bread is milled so fine that your gut digests it almost as fast as white flour. The wheat germ that would normally slow things down gets ground away in the process. Sourdough finished last, and here that's the good kind of last. It only raised blood sugar 50 points. That's a 20-point gap between sourdough and white bread. Same amount of flour. Same size slice. So what's going on? It's not the grain. It's the fermentation. Real sourdough sits for hours, sometimes days, while wild yeast and bacteria slowly break the dough down. That process produces lactic acid. The acid changes the starch inside the bread, so it takes your gut longer to break it apart. The sugar still reaches your blood. It just gets there slower, in a smaller wave instead of a flood. The University of Sydney's glycemic index database backs this up with real numbers: white bread around 75, whole wheat around 69, sourdough around 54. Same ranking as our test, and a similar-sized gap. A classic Swedish study from the 1990s found the same thing when researchers fed people bread made with sourdough fermentation versus plain baker's yeast. The sourdough loaf produced a smaller, gentler rise every single time, even when the flour was identical. And researchers at Arizona State University just wrapped a trial testing something even more specific. They fed prediabetic adults sourdough fermented for different lengths of time, from one day up to three, to see if a longer ferment means an even gentler rise. The early signal points the same direction as the older research. Longer fermentation, smaller spike. I don't know yet exactly how much longer fermentation helps beyond a certain point. The research is still young there. But the basic pattern, real sourdough beating both white and whole wheat, is about as consistent as anything in this field gets. |
