Rice-first spiked hardest. And it wasn't close. That's the day I ate the rice on an empty stomach, with nothing else in front of it. Here's why the order matters this much. Rice breaks down into sugar fast. Eaten first, on an empty stomach, that sugar floods into your bloodstream almost right away. But when protein and vegetables go in first, they slow down how fast your stomach empties into your gut. In other words, the same rice arrives more slowly, so your body absorbs its sugar in a gentler stream instead of a rush. A Weill Cornell Medical College study found something similar in people with type 2 diabetes. Eating vegetables and protein before carbs brought blood sugar in close to a third lower at the one-hour mark, and insulin dropped even more. So it's not just one small study. A review published this January pulled together years of meal-order research and found the same pattern holds even in healthy adults with no diabetes at all. Order matters more than we think. There's a hormone behind this too. Eating protein first triggers something called GLP-1, the same hormone that drugs like Ozempic work through. It slows digestion and blunts the sugar rush that follows. No prescription required. |
