Freeze your bread. Toast it straight from frozen. Let it sit a minute before you eat it. That's it. So why does that small ritual matter? A 2023 trial in the journal Novelty in Clinical Medicine put 32 healthy adults through it. Each person ate fresh white bread on one day, then bread that had been frozen and reheated on another. The frozen-and-reheated bread raised their blood sugar less, every single time it was tested. And it didn't seem to matter whether the bread sat in the freezer for three days or seven. The drop in blood sugar response showed up either way. It's revealing. This isn't just a bread thing right now, either. Henry Ford Health published a piece earlier this year on a related idea that's getting a lot of attention: when gut bacteria break down resistant starch, your body releases more of its own GLP-1, the same hormone that drugs like Ozempic mimic. In other words, the trick that makes your toast gentler on your blood sugar might also nudge your body to make a little more of its own appetite-calming hormone. The research on that link is still early. I'm not saying a frozen bagel does what a weekly injection does.
